Whipped egg butter
Ingredients
2 eggs
1 dl 35% whipping cream
100 g butter
salt
How to make?
Beat the eggs thoroughly and heat the cream to boiling point. Whisk the cream and eggs together, then heat carefully while stirring constantly until the mixture thickens. Do not let it boil or curdle! For a more reliable result, you can also heat the egg-cream mixture in a water bath. Then, whisk in the butter piece by piece. The mixture will remain creamy and airy.
Season with salt. If desired, you can also add chopped herbs or other preferred additions.
Transfer the egg butter into a lidded container or bowl and let it set and thicken in the refrigerator overnight.
