Small barley scones
Ingredients
3 dl milk
20 g fresh yeast
1 tbsp sugar
1 tsp salt
0.5 dl cooking oil
5 dl barley flour
4.5 dl wheat flour
good quality beef or pork broth
How to make?
Dissolve the yeast in warm milk, add the remaining ingredients, and knead into a soft dough. The amount of flour may vary slightly depending on the temperature of the liquid and the grind of the barley flour. Cover the dough bowl with plastic wrap or a damp kitchen towel and set it in a warm place to rise.
Knead the dough again after it has doubled in size and shape it into 12 buns. Place the buns on a baking sheet lined with parchment paper and let them rise again. Brush with water and bake in a preheated oven at 190 degrees Celsius for 8-10 minutes.
Dip the buns in hot broth, return them to the baking sheet, and place them back in the oven for a couple of minutes to dry slightly.
The buns taste best when served warm. They are perfect to serve with broth.
If you want to make small loaves in a muffin tin, use less flour, about 4 + 4 dl.
